We are pleased to announce the “9th International Nixtamalization Congress” (9° Congreso Internacional de Nixtamalización) that will be held from September 27th to 29th at the Forensic Auditorium of the Autonomous University of Queretaro (Queretaro, Mexico).

The event will provide space for the scientific, technological, industrial, and agricultural communities. In this edition of the congress, the activities will focus on the scientific, technological, and industrial aspects of the maize value chain, with two main areas. The first area will address topics related to the quality and physicochemical characteristics of the raw materials used in the nixtamalization process, as well as nutraceutical and ecological trends. The second area will cover the technical aspects of maize processing for nixtamalization and agricultural management, including the efforts made by farmers to obtain agroecological maize.

The Congress will feature a distinguished line-up of keynote speakers, all highly regarded experts in their respective fields.
